- Combine dry ingredients: Whisk together 2.3 cups graham flour or whole wheat flour, 0.5 cups all-purpose flour, 1 teaspoons baking powder, 0.5 teaspoons baking soda, 0.5 teaspoons salt, and 0.8 teaspoons cinnamon in a bowl.
- Cream butter and honey: In a separate bowl, beat 0.5 cups unsalted butter, softened until creamy, then mix in 0.3 cups Basswood Honey and 0.3 cups brown sugar until smooth.
- Add wet ingredients: Add 2 tablespoons milk and 1 teaspoon vanilla extract to the butter mixture and combine.
- Form the dough: Gradually mix the dry ingredients into the wet mixture until a stiff dough forms. If crumbly, add another splash of milk.
- Chill the dough: Wrap the dough and chill until firm enough to roll.
- Roll and cut: Heat the oven to 350°F (175°C). Roll the dough out thin between two sheets of parchment, then cut into rectangles and prick each with a fork.
- Bake: Transfer crackers to a lined baking sheet and bake until firm and lightly golden at the edges.
- Cool: Cool completely on the pan — the grahams will crisp up further as they cool.
