Steps
- Preheat: Heat the oven to 300°F (150°C) and line a large rimmed baking sheet with parchment paper.
- Mix the dry ingredients: In a large bowl, combine 3 cups old-fashioned rolled oats, 1 cup raw almonds or pecans, roughly chopped, 0.5 cups raw pumpkin seeds or sunflower seeds, 1 teaspoon ground cinnamon, and 0.5 teaspoons fine salt.
- Add the honey mixture: Whisk 0.3 cups Honey Acres Wildflower Honey, 0.3 cups olive oil or melted coconut oil, and 1 teaspoon vanilla extract together, pour over the oat mixture, and stir until every piece is coated.
- Bake: Spread the granola in an even layer and press it down lightly. Bake for 30 minutes, stirring once at the 15-minute mark, until golden and fragrant.
- Cool for clusters: Let the granola cool completely on the pan without stirring, so it hardens into clusters. Break it apart and mix in 0.5 cups dried cranberries or raisins.
