Steps
- Prep the ham: Heat the oven to 325°F (165°C). Score the surface of 8 pounds bone-in, fully cooked ham in a diamond pattern and place it in a roasting pan, cut-side down. Stud with 0.5 cup whole cloves, for studding (optional) if using.
- Bake, covered: Cover the ham loosely with foil and bake until warmed through.
- Make the honey-mustard glaze: While the ham bakes, combine 0.8 cups Basswood Honey, 0.5 cups brown sugar, 3 tablespoons Dijon mustard, 2 tablespoons apple cider vinegar, 0.3 cups unsalted butter, 0.5 teaspoons ground cloves, and 0.5 teaspoons cinnamon in a saucepan. Simmer until slightly thickened.
- Glaze the ham: Remove the foil, brush the ham generously with the glaze, and return it to the oven uncovered.
- Finish baking: Continue baking, basting with more glaze every 45 minutes, until deeply caramelized and the internal temperature reaches 140°F (60°C).
- Rest and serve: Let the ham rest before slicing, brushing with any remaining glaze.
