- Season the chicken: Season 3 pounds boneless, skinless chicken thighs on both sides with 1.5 teaspoons salt and 0.5 teaspoons black pepper.
- Sear the chicken: Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Sear the chicken until golden brown on both sides and nearly cooked through.
- Make the honey mustard glaze: Whisk 6 tablespoons Clover Honey, 4 tablespoons Dijon mustard, 2 tablespoons whole grain mustard, 4 garlic cloves, minced, 2 lemon, juiced, and 4 teaspoons fresh thyme, chopped together in a small bowl.
- Glaze the chicken: Lower the heat and pour the glaze over the chicken, turning to coat. Simmer until the chicken is cooked through and the sauce has thickened slightly.
- Rest and serve: Let the chicken rest for a few minutes, then spoon the sauce over the top before serving.
