- Prep the pan: Heat the oven to 350°F (175°C). Grease and line a 9x5-inch loaf pan.
- Combine dry ingredients: Whisk together 1.8 cups all-purpose flour, 1 teaspoons baking soda, 0.5 teaspoons salt, 2 teaspoons ground ginger, 1.5 teaspoons cinnamon, 0.5 teaspoons ground cloves, and 0.3 teaspoons ground nutmeg.
- Combine wet ingredients: In a separate bowl, whisk 0.5 cups Buckwheat Honey, 0.3 cups molasses, 0.5 cups unsalted butter, melted, 0.3 cups brown sugar, and 2 large eggs until smooth.
- Combine batter: Fold the dry ingredients into the wet mixture, then stir in 0.5 cups hot water or brewed coffee until the batter is smooth and pourable.
- Fill the pan: Pour the batter into the prepared pan.
- Bake: Bake until a tester comes out clean and the top springs back when touched.
- Cool and serve: Cool in the pan for 10 minutes, then turn out onto a rack to cool completely before slicing.
