If you are a fan of something sweet and spicy, you definitely need to try this. A sticky, tangy hot honey made with fresh chiles — perfect for drizzling over just about anything.

Steps

  1. Prep the chiles: Rinse the 7 fresh whole red bird's-eye or other small hot chiles well, then use the tip of a sharp knife to cut a few small slits into each one — this helps their flavor and heat infuse into the heated honey.
  2. Simmer with the honey: Stir in the 0.5 cups clover honey, drop the heat to low, and let it simmer gently for 10 minutes.
  3. Cool and strain: Pour into a jar and let cool to room temperature. Fish out and discard the chiles once cooled. Refrigerate for up to 2 weeks.

Notes

Clover honey is the classic pick here since its mild flavor lets the chile heat shine, but wildflower from your source would work nicely too if you want something a touch more floral. Use 5 chiles for a gentle warmth or up to 10 for real heat — no habanero or Scotch bonnet on hand can sub in if you can't find small hot chiles, just use a few. Wash the chiles well before using, and be sure to slit them so their flavor infuses fully. Keep in the fridge for up to 2 weeks — delicious over vegetables, biscuits, cheese, fried chicken, pizza, grilled meat, sandwiches, or stirred into salad dressing.
