Steps
- Activate the yeast: In a large bowl, stir together 1¼ cups warm water (105–110°F / 40–43°C), 2.3 teaspoons instant yeast, ¼ cup Honey Acres Buckwheat Honey, and 1 tablespoon molasses. Let it sit until foamy.
- Make the dough: Add 2 tablespoons unsalted butter, melted, 1.5 cups whole wheat flour, 2 cups bread flour, plus more for dusting, 1 tablespoon unsweetened cocoa powder, and 1.3 teaspoons fine salt. Stir to form a dough, then knead until smooth and slightly tacky.
- First rise: Place the dough in a greased bowl, cover, and let it rise in a warm spot until doubled in size.
- Shape the loaf: Gently deflate the dough, shape into a loaf, and place it in a greased 9x5-inch loaf pan. Cover and let it rise until about 1 inch above the rim.
- Bake: Heat the oven to 350°F (175°C). Bake until the loaf sounds hollow when tapped and reaches 190–200°F (88–93°C) inside.
- Cool: Brush the top with 1 tablespoon melted unsalted butter, turn out of the pan, and cool on a wire rack before slicing.
